Absolutely fabulous researched book! I have ordered at least 20 copies of the book since it was published. Instead of taking a bottle of red & white wine to friends when I am invited to dinner, if I know they are "Foodies", I bring them a copy of this great, very informative book. They love it and are so appreciative of the very scientific, helpful information contained in it.You do not have to read a chapter - you can open to any page and learn something very informative and interesting. This book is absolutely beautiful.It's very detailed and informative. It is a wonderful teaching tool, whether you want to improve your cooking, or just want to be more educated on what you eat.

Full of images with scientific informations. I think even those who have short attention span would like to read this beautiful book. You don’t have to read the whole page or page after page to get the point. It is bite-size. You can choose to read just one photo and will learn already. It’s like a Power Point presentation in a way. A high tech book for display.

I had found this book as I was searching for guides on cooking and the basics of cooking. When it first arrived I started reading it and was amazed at the detail and work put into it as the hexagons tell about the what it does for it or tips on things like “Why do we Cook?” They have pictures that tell the ways of cooking and not just explain the concepts without examples. I will try some of the cooking concepts, I never knew that oxygen affects meat. My full review was that I love it, it just shows so much about cooking I didn’t know of. 10/10 5 stars, And I recommend this to anyone with a interest towards cooking.

I've now bought three of these for colleagues who are scientists and love cooking, and I'm planning to buy one for myself too. The information content is amazing and answers all the questions I've ever had about how to pick the best/ripest foods, why things are cooked a certain way, and what is the best way to get the most nutrients out of the foods I'm eating. Its not just about the cooking process but about the raw ingredients as well. Its great for cooks, scientists, and anyone curious about their food and how to prepare it. It's going to be my new go-to for graduation gifts and first home presents because it contains info everyone should know to make the most of their first kitchen and first attempts at cooking. I've sampled several books of this type and most were very boring and didn't really have the content I was hoping for, along with several being more centered on the chef/writer than on the food and science! So I love the great pictures and diagrams and information contained in this book and this its the best one of its kind available.

Gift for a child who is really interested in cooking. He's finding this book to be highly engaging, the charts and graphics are very well done and very informative. The adults are also learning from this and find it really useful.

I purchased this form grandchild who is interested and curious about cooking..for people like us who ask why things do what they do? This is worth The price..excellent book
